- 2 cups cooked and cooled jasmine rice (preferably refrigerated overnight)
- 200g shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, finely chopped
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Optional: 1 cup diced pineapple or 1/2 cup cashews for added flavor
Instructions:
- Prepare Ingredients:
- Cook jasmine rice and let it cool. Preferably use leftover refrigerated rice.
- Peel and devein the shrimp. Chop the vegetables and green onions.
- Cook Shrimp:
- In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add shrimp and cook until pink and opaque. Remove from the pan and set aside.
- Scramble Eggs:
- Push the shrimp to one side of the wok. Add another tablespoon of oil if needed.
- Pour beaten eggs into the wok and scramble until just set.
- Cook Vegetables:
- Combine the scrambled eggs with shrimp. Add mixed vegetables and chopped green onions. Stir-fry until vegetables are tender-crisp.
- Add Rice:
- Add the cooked and cooled jasmine rice to the wok. Break up any clumps and mix well with the other ingredients.
- Season with Sauces:
- Drizzle soy sauce, oyster sauce, and sesame oil over the rice. Toss everything together until evenly coated. Adjust seasoning with salt and pepper.
- Add Shrimp Back In:
- Return the cooked shrimp to the wok. Stir to incorporate with the rice and vegetables.
- Optional Additions:
- If desired, add diced pineapple or cashews for extra flavor and texture.
- Stir-Fry:
- Stir-fry the entire mixture for an additional 2-3 minutes until everything is well combined and heated through.
- Serve:
- Transfer the Shrimp Fried Rice to a serving dish. Garnish with additional chopped green onions.
