Ingredients:
- 500g of shrimp
- 2 tablespoons of minced lemongrass
- 1 tablespoon of minced garlic
- 1 tablespoon of minced ginger
- 1 red chili, sliced
- 1 green chili, sliced
- 1/2 teaspoon of salt
- 1/2 teaspoon of sugar
- 1/2 teaspoon of chicken stock powder
- 1/4 teaspoon of black pepper
- 1 tablespoon of fish sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of vegetable oil
- 1/4 cup of chopped scallions
- Coriander and sliced chili for garnish
Instructions:
- Peel and devein the shrimp, leaving the tails on.
- In a small bowl, mix together the minced lemongrass, garlic, ginger, red chili, green chili, salt, sugar, chicken stock powder, and black pepper.
- Heat a wok or frying pan over high heat and add the vegetable oil.
- Add the shrimp to the wok and stir-fry for 2-3 minutes until they turn pink.
- Add the mixture of lemongrass, garlic, ginger, and chili to the wok and stir-fry for another 1-2 minutes.
- Add the fish sauce and oyster sauce to the wok and stir-fry for an additional minute until everything is well mixed.
- Turn off the heat, add the chopped scallions and stir well.
- Transfer the shrimp to a serving dish and garnish with coriander and sliced chili.
