Ingredients:
- 3 cups of cooked rice
- 300 grams of chicken breast, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 eggs
- 1 carrot, peeled and diced
- 1/2 cup of peas
- 2 tablespoons of vegetable oil
- 1 tablespoon of soy sauce
- 1 teaspoon of fish sauce
- Salt and pepper to taste
- Green onions for garnish
Instructions:
- In a pan, heat 1 tablespoon of oil over medium-high heat. Add the chicken and cook until it is no longer pink, then set aside.
- In the same pan, add another tablespoon of oil and sauté the onion and garlic until fragrant.
- Add the diced carrot and cook until it is soft. Add the peas and stir-fry for another minute.
- Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs and mix them with the vegetables.
- Add the cooked rice to the pan and mix everything together.
- Add the cooked chicken, soy sauce, fish sauce, salt, and pepper. Mix everything well and cook for another minute or two.
- Garnish with chopped green onions and serve hot.
