Ingredients:
- 1 block firm tofu (pressed and cubed)
- 2 tablespoons soy sauce (or tamari for a gluten-free option)
- 1 tablespoon olive oil (or any vegetable oil)
- 2 cups cooked rice (preferably cold or day-old)
- 1 cup mixed vegetables (e.g., carrots, peas, corn, bell peppers), diced
- 2-3 cloves garlic, minced
- 1 small onion, chopped
- 2 green onions, sliced
- 2 eggs (optional, for a non-vegan version)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Optional: 1 tablespoon hoisin sauce or sriracha for extra flavor
Instructions:
- Prepare the Tofu:
- Press the tofu to remove excess moisture. Cut into small cubes.
- In a bowl, toss the tofu cubes with 1 tablespoon of soy sauce. Let marinate for about 10 minutes.
- Cook the Tofu:
- Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat.
- Add the marinated tofu cubes and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove tofu from the pan and set aside.
- Cook the Vegetables:
- In the same pan, add a bit more oil if needed and sauté the chopped onion until translucent.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the mixed vegetables and cook until they are tender-crisp, about 3-5 minutes.
- Add the Rice:
- Push the vegetables to one side of the pan and add the cold rice to the other side. Break up any clumps with a spatula.
- Stir the rice and vegetables together until well mixed and heated through.
- Combine Ingredients:
- Return the cooked tofu to the pan.
- Add the remaining tablespoon of soy sauce, sesame oil, and any additional sauces you like (hoisin or sriracha).
- Stir everything together until evenly combined. Cook for another 2 minutes.
- Add Eggs (Optional):
- If using eggs, push the rice mixture to one side of the pan and crack the eggs into the empty side.
- Scramble the eggs and cook until fully set, then mix them into the rice.
- Finish and Serve:
- Taste and adjust seasoning with salt and pepper if needed.
- Garnish with sliced green onions.
