Delicious Tofu Fried Rice

Ingredients:

  • 1 block firm tofu (pressed and cubed)
  • 2 tablespoons soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon olive oil (or any vegetable oil)
  • 2 cups cooked rice (preferably cold or day-old)
  • 1 cup mixed vegetables (e.g., carrots, peas, corn, bell peppers), diced
  • 2-3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 green onions, sliced
  • 2 eggs (optional, for a non-vegan version)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional: 1 tablespoon hoisin sauce or sriracha for extra flavor

Instructions:

  1. Prepare the Tofu:
    • Press the tofu to remove excess moisture. Cut into small cubes.
    • In a bowl, toss the tofu cubes with 1 tablespoon of soy sauce. Let marinate for about 10 minutes.
  2. Cook the Tofu:
    • Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat.
    • Add the marinated tofu cubes and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove tofu from the pan and set aside.
  3. Cook the Vegetables:
    • In the same pan, add a bit more oil if needed and sauté the chopped onion until translucent.
    • Add the minced garlic and cook for another 30 seconds until fragrant.
    • Add the mixed vegetables and cook until they are tender-crisp, about 3-5 minutes.
  4. Add the Rice:
    • Push the vegetables to one side of the pan and add the cold rice to the other side. Break up any clumps with a spatula.
    • Stir the rice and vegetables together until well mixed and heated through.
  5. Combine Ingredients:
    • Return the cooked tofu to the pan.
    • Add the remaining tablespoon of soy sauce, sesame oil, and any additional sauces you like (hoisin or sriracha).
    • Stir everything together until evenly combined. Cook for another 2 minutes.
  6. Add Eggs (Optional):
    • If using eggs, push the rice mixture to one side of the pan and crack the eggs into the empty side.
    • Scramble the eggs and cook until fully set, then mix them into the rice.
  7. Finish and Serve:
    • Taste and adjust seasoning with salt and pepper if needed.
    • Garnish with sliced green onions.
